
Samosa omelette with mayonnaise
As discussed yesterday, there are many dishes you can make with this keema curry leftover. Snacks and appetizer to main dish… Here’s some examples.
Indian Pizza: Top pizza dough with samosa mixture, and shredded cheese. Bake at 400F until cheese is bubbly and golden brown.
Keema and Cheese Toast: Top bread with samosa mixture, and shredded cheese. Toast/bake at 400F until cheese is bubbly and golden brown. (This was a my favorite snack when I was at college in Tokyo – a specialty of a cafe I frequented with my friends.) : )
Dry Curry: Fry left over rice in oil. Do not use the rice that’s just cooked, it will turn into a mush. If it was frozen, microwave it to thaw, but do not cook through.) Add the keema curry, diced red pepper and raisins for color and cook until it’s heated through. Top with sliced almonds.
Samosa: Mix with about the same amount of cooked potatoes (in my case, often with sautéed potato and Swiss chard leftover), stuff it in dough or wonton skins and deep fry or bake until golden brown.
Samosa Omelette: Use the same mixture as above. Beat eggs, season well and mix in the samosa mixture and cook both sides in non-stick skillet until golden.
